CREAMY STUFFED LEBANESE PITA RECIPE
Ingredients
- 2 Lebanese khabus Pita bread
- For the filling:
- 1 125 g apple, cubed fine
- 1/2 cup 120 ml mayonnaise
- 10 g mustard paste
- 2 tbsp 30 ml cream
- salt to taste
- 1/2 tsp 2 g pepper powder
- 100 g cheese cubed
- 1 tbsp 15 g ginger-garlic paste
- 1/2 tsp 2 g chili powder
- 1/2 tsp 2 g coriander powder
- 1/2 tsp 2 g cumin powder
- 1/2 tsp 2 g turmeric powder
- 2 tbsp 30 ml tomato puree
- 1/2 cup 100 g American corn, boiled
- 1 cup 200 g cauliflower florets, boiled
- 2 tbsp 30 ml cream
- 1/2 tsp 2 g garam masala powder
- 20 g butter
- 25 g coriander leaves chopped
Instructions
- Soak the soya granules in water for 10 minutes.
- Strain and squeeze them dry.
- Cut the brinjals into one cm cubes and deep fry in hot oil till done.
- Remove from oil and keep aside.
- Heat oil and fry the onion till golden brown.
- Add green chilies and ginger-garlic paste.
- Fry for a minute. Add chili powder, coriander powder, cumin powder, and turmeric powder.
- Saute for three minutes.
- Add tomato puree and stir-fry for three minutes.
- Add American corn, brinjal, cauliflower, soya granules, and seasoning.
- Simmer for five minutes or till dry.
- Finally, add the cream and garam masala powder.
- Mix well and stuff this into the capsicums.
- Dot with butter and bake in a hot oven for about eight minutes.
- Serve, garnished with coriander leaves.

- Take the toasted pita halves out of the oven and stuff them with the creamy mixture.
